Culinary Arts Post-secondary Market Basket

Post-Secondary Culinary Arts 2020 is a Market Basket Format!  

Competitors will receive a market basket with various proteins, vegetables, fruits, and starches.

Mystery Basket Ingredients Include:

(Must Use Some of Each- Fabrication & Entree) 
1 each  Whole chicken
4 oz Sliced bacon
8 oz Sugar snap peas
1/2 pound Pearl Onions
1 pound Kale
1 each  Celery root
1 pound Red potatoes
3 each Roma tomatoes
1 cup Green lentils


Pantry Ingredients (May use any)
AP Flour Apples Butter
Granulated sugar Lemons Cream
Cornmeal Garlic Milk
Corn Starch Onions Eggs
Jasmine Rice Scallions Cheddar cheese
Cous Cous Leeks Parmesan cheese
Quinoa Carrots Blue cheese
French Baguette Celery
Honey Red Bell Peppers
Vegetable Oil Mushrooms
EVOO Romaine lettuce
Soy Sauce Spinach
Tabasco Various herbs
Dijon mustard Russet potatoes
Whole grain mustard Roma tomatoes
Almonds
Walnuts
Tomato puree
Red vinegar
White vinegar
Various dry spices
Chicken stock
Veal stock
